Orange Clove Ricotta Cookies

Ingredients

1/2 cup unsalted butter, softened

1 cup granulated white sugar

1 egg

8 oz ricotta cheese

1/2 tsp vanilla

Zest of one orange

1/8 tsp ground cloves

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 1/4 cups all-purpose flour

For the glaze:

1 cup powdered sugar

Zest of one orange

1 tbsp orange juice

Procedure

Beat the softened butter and granulated sugar until light and fluffy with a hand-held or stand mixer. Add the egg and mix well. Addricotta cheese, vanilla, and orange zest and beat until smooth. Add the cloves, baking powder, baking soda, and salt, and mix until incorporated. Add the flour and mix just until the flour is combined. Be careful not to overmix.

Cover the dough with plastic wrap and place in the refrigerator for 1 hour.

Preheat the oven 350F. Form cookie balls using a 1 ounce scoop, or about 2 tablespoons of dough in a ball shape (it helps to have a small container of water on hand, to dip the scoop or spoons and/or hands in, so dough doesn’t stick and releases well).

Return the cookie balls into the refrigerator for 10 minutes. Transfer the cookie balls onto a cookie sheet, lined with parchment paper or silicone mat, and bake in the preheated oven for 15 to 18 minutes or until the bottoms of the cookie begin to just brown and they are semi-firm (no longer gooey in the center).

Remove the cookies from the oven and allow them to cool on the cookie sheet for 1 minute and remove to a cooling rack to finish cooling.

For the glaze, mix powdered sugar, zest of additional orange, and orange juice in a small mixing bowl until thoroughly combined. Dip the cooled cookies into the glaze and set on a wire rack to drain and dry the glaze.
