Strawberry-Avocado Toast

A simple summer recipe that balances sweet, sour, salty, and bitter, elevating the overall result (and won’t heat up your kitchen!).

Makes 2 Toasts

INGREDIENTS:

1 Avocado, ripe, pitted

1 Tbsp. Lemon juice

Salt and freshly ground Black Pepper

2 large slices of Sourdough or Rye bread, toasted 

1 cup fresh Strawberries, sliced

½ cup fresh Goat cheese

¾ cup baby Arugula

1 Tbsp. Extra Virgin Olive Oil or Avocado Oil

½ teaspoon Caraway seeds, crushed

PROCEDURE:

  1. In a small mixing bowl, mash avocado and season with lemon juice, salt, and pepper as desired. 

  2. Spread ½ of the mashed avocado evenly on each piece of toast.

  3. Top the avocado with sliced strawberries, shingling nicely. Sprinkle with salt and pepper (maldon salt would add an extra crunch of salty goodness).

  4. Crumble the goat cheese over the strawberries.

  5. In a small bowl, toss the arugula with the olive oil and crushed caraway seeds, season with salt and pepper. 

  6. Garnish the toasts with the arugula and serve.

For a heartier meal, add a poached or fried egg before garnishing with the arugula.
